2 cups of spinach
2 cups of mixed greens
1 stalks of celery, chopped
1/8 of a red onion thinly sliced
½ of a large navel orange peeled and slices cut in half. (Drained canned mandarin oranges can be used as an alternative if desired)
½ cup fresh sliced strawberries
½ cup chopped walnuts
2 tbsp olive oil
2 tbsp fresh shopped parsley
Fresh ground pepper to taste
1) Combine salad ingredients into a bowl and toss to mix.
2) Whisk dressing ingredients in a small bowl then drizzle over salad.
3) Serve and enjoy!
