Ingredients:
1 lb red potatoes, quartered
1 large clove of garlic, minced (optional)
2 tbsp fresh chopped dill weed (substitute dried dill if needed)
2 tbsp olive oil
Directions:
1) Preheat oven 400 degrees2) Combine quartered potatoes, minced garlic, olive oil, and fresh dill in a large bowl and mix well to coat potatoes. *Option, place all ingredients in a large Ziplock bag and shake well to mix.

3) Place potatoes on a large baking sheet and bake for 20-30 minutes or until potatoes are golden brown and tender, mixing half way.
