2 cups oat flour (works much better if you grind your own and make sure it is course)

¼ cup raw (or coconut) sugar

½ tsp baking soda

1 ½ tsp baking powder

¼ tsp salt

3 large bananas, mashed

1 ½ tsp vanilla

1 ½ Tbs coconut oil, melted

1 cup unsweetened almond milk

Preheat oven to 350℉. Combine all dry ingredients and set aside. Combine all wet ingredients, mixing well so there are no chunks of banana. Slowly combine wet and dry ingredients. Bake for 30 minutes or until an inserted toothpick comes out clean.

Makes 12 muffins.
