2 cups brown lentils
8 cups water
1 yellow onion, peeled & diced
2 ribs celery, diced
2 medium carrots, peeled & diced
2 tsp minced garlic
2 vegetable bouillon cubes
¼ tsp black pepper
Salt to taste
½ tsp dried oregano
1-15 oz can diced tomatoes
2 Tbs red wine vinegar (optional)


Place all ingredients in crockpot except for red wine vinegar. Cook on low for 8 hours. Add red wine vinegar (optional) and cook an additional 15 minutes.
Serve with a fresh green salad and Ezekiel garlic toast.
